Aonuma: Oh, right, let me elaborate on that. Ocarina of Time basically has two endings of sorts; one has Link as a child and the other has him as an adult. This game, The Wind Waker, takes place a hundred years after the adult Link defeats Ganon at the end of Ocarina.

Aonuma was just going to say 'From the end.' It was actually Miyamoto who mentioned that there was 2 endings. Aonuma just explained it. so if both the producer/creater of the game and the director agree then it's canon.
Plus even if they hadn't said anything it is practically confirmed by a ton of things in the games, specially in WW and TP backstories. Though good try for trying to come up with a theory that is different from the majority. Better luck next time.
