music theme vs. the apparance, the ring, the geography, the location, the fact that Death Mountain was the talest mountain (the islands are mountain tops, meaning Death Mountain, being the notably tallest, would still be well above sea level), the Goron-like sculptures, the volcanic nature, ect..
Adding to that, it wouldn't seem right for a version of the Death Mountain to play on Dragon Roost because it is surrounded by water, has a colourful nature, has a cheerful atmosphere, and it is now an island. The music would not fit at all.
