So, did you want to keep the magic ability of his secret while explaining how is hair and eye color vary? That's what I'm gathering here. If that's the case, I'd go with LeafyG, and say don't bother mentioning it at all.

Okay, I get it now. Durr.
Say something witty. Something that you wouldn't expect to read when reading the description of a person. People often write their characters the basic way. Example being:

Name: Bob Seget
Age: 45
Physical Appearance: Brown short hair, blue eyes, etc, etc, blah, blah

If you're stuck on trying to describe in a normal, generic way, then you're best off going with what LeafyG said. But if you do want to mention it without letting them know abou the magic ability, you could maybe do something like this:

Name: Bob Seget
Age: Pretty close to a middle aged crisis.
Physical Appearance: He's your average middle aged man. Stock built. Carries himself like a rich man that owns many fancy cars. Got some rough, oil stained aged skin, you know.. the whole middle aged man combo. However, as for actual physical attributes? Well, that depends on the day.
