String Theory is, essentially, the idea that everything is made up of strings that behave a certain way. However, it is impossible to prove this theory correct, so it's slowly being rejected by most physicists until a test can be found.

String theory isn't so much being regected as it is sharing the spotlight with other fundamentalist theories, all of which can never be proven, but help explain and unify theories in Relativity and Quantum that have been widely accepted for many years, but have never untill recently worked together. String theory is an integral part of M-Theory, which is a very popular modern theory.
Superstring theory (string theory for short) is the idea that all quarks, leptons and bosons (which acording to current theories are the smallest bits of matter possible) are made up of identical string-things that vibrate diferently to define themselves. Also, acording to string theory, the universe has 10 dimentions. M-Theory adds another, for a total of 11 dimentions. Although dated a bit (everything in science is dated to tell the truth), The Fabric of the Cosmos is an excelent read if you want to learn more about modern unifying theories in physics. It's far from a light read, but it's not too technical either. Note: In modern physics, there is a general understanding that very little can actually be "proven". Almost everything that can be observed or experienced has already been explained by Newtonian Classical Physics. Only things at extremes of certain spectrums (like extremely big or extremely small stuff) breaks these rules, and so these theories exist to explain them. Relativity has been somewhat proven, but a lot of Quantum theories that are treated as canon have not actually been proven at all, they just work.
