Yes they do. The same system works. Some can evolve by being held for 5 days, others that evolve by happiness or using an item. It will give you the option in the drop down box on the party page.

You can keep them in your party to level them up, put two that have matching egg groups into the daycare to breed, or store them in your PC boxes.

So...what happens after they are hatched?

I like how when you pick eggs, it doesn't show you what it looks like. It's more random.
