I believe, you can't.
You can set back the special timed bombs to the normal ones, if you talk with the bomb-maker Minish again, but the shield... I'm not sure though. Never wanted to use the old one again.

no, I have the Mirror Shield but I can't buy the normal shield because I already have a shield, and in the process of getting a Mirror Shield, you have to restrain yourself to not get a normal shield.
