Collecting and upgrading things isn't my idea of depth in a game. That's just extra fluff.
Most of the handheld Zelda games are nice little adventures, though. I usually prefer the stationary installments, but occasionally, a handheld one can keep me entertained for a while.

I do like the handheld games, but I don't think they're as good as the console versions. They're usually just as exciting to play story-wise and there's usually lots of side quests and such to keep you entertained in both types, but the problem I have with handheld games is that the controls don't feel as fluent and the small screen/quiet sound effects somewhat take away the epicness from the games D:

I like the Oracle of Seasons, I thought it was phenomenal. No doubt it was limited, since it was on the GBC, but it still had awesome puzzles, interesting characters, and challenging puzzles. Too bad I sold my copy...
Never really took an interest in the DS Zeldas. No particular reason why, I just didn't.

I'm not a big fan of the handhelds. I have good memories of TMC, but that's about it. LA was pretty good as well, but it's been so long since I played it.

In general I like the feeling of playing on a big screen, not a tiny one.

Link's Awakening is an brilliant game. In my all time Top 5 of Best Games ever made.

Even though I usually prefer the 3D games (both in Zelda and Mario franchises), Link's Awakening beats out three of the four 3D console Zelda's you mentioned in my opinion. Every aspect of the game is basically perfect. Everyone should play it.
All the other handheld games are pretty good also, though Spirit Tracks would be the only other that beats one of the 3D console games.

So yes, if you skip the handheld games, especially LA, you're definitely missing out.
