1.Ganondorf was not waiting years to fight someone. His goal is not to defeat Link, nor is it to kill him. As we see in
tWW, he not only defeats him(twice actually, the first time when Link gets the master sword, and the second time when he takes Link's triforce piece.) He then says that he doesn't wish to hurt or kill them, but only to take their triforce pieces.
2. Ganondorf looks older in Wind Waker, so yeah, I think he does age.
3.Ganondorf, unfortunately CAN'T win. His lust for more power is a goal that can never be completely achieved. He will always want more. The only for Ganondorf to win would be to learn to be content with what he' s got, and stop coveting over those things that he doesn't have.
