They are certainly not emotionless.
- Some Bosses such as Ganondorf/Vaati/Yeta clearly show emotions - In WW there is a Moblin that writes loveletters - The Moblins in LoZ who give you money, clearly fear that someone finds out that they helped Link. That's why they say that Link should keep it a secret. - Shadowmessengers in TP were once human beings, that means that they once had feelings I guess more evolved/human like enemies such as Moblins, Zoras, Gerudo-Guards ,the Stalfos enemies in Ikana, corrupted beings (e.g. Yeta and Fyrus), the Gorons you fight in TP, and bosses such as Vaati and Ganondorf have emotions. The more animal/monster like enemies probably have less or no emotion.

I'm against giving ordinary enemies emotions. It makes it harder to kill them. However I do think it's a good idea to show examples of friendly NPC's of a typically hostile species. However I think it's a good idea to give the enemies a motive. For example in TP the Bulbins were only working with Ganondorf becuase they "Follow the strongest" meaning the have a need for leadership and protection.

In may opinan the Bulbin talk,they make sort of a growling sound,it's good anuff for me.

moblins(on tww) they can be scared of you if you hit them with an arrow/bomb and if he sees it again he runs, fear IS(against common belief)an emotion

Want to see emotion? go to Cave of Ordeals. Snipe a bulbin with your bow. Any bublbins shooting at you will put away their bows and look at their fallen comrade until he dissapeasrs. Now that is emotion.

Moblins get pretty emotional when I come at them with bombs in TWW.

Wells that's pretty much all I was going to say. Another mayby not monster, but enemy for sure with emotions are the Garo. "to die wihout leaving a corpse, that is the way of us Garo." That is in my opinion one of the most emotional enemies for that reason.
