The Deku Tree in WW is the Deku Tree Sprout from OoT (the Deku Tree died, and after Adult Link broke the curse on the Forest Temple, the Sprout could grow on the AT).
He states the Koroks once took human shapes (the Kokiri are humanoid) and that they changed to adapt to life in the sea.
He even calls them his "beloved children" which is how the Deku Tree addresses the Kokiri.
The Kokiri are not children or Hylians. They are spirits of the Forest that are immortal and ageless that chose to take humanoid, elfin shape.
Perhaps it was because there were no fish in the Great Sea, & that was their diet (I assume)?

thhe never really did say what ever happened to the Gerudo. It was an all women tribe if you don't count gannon, and link freed all there male prisoners. Maybe they just died out before the flood or they could have moved deep into the desert and avoded the flood.
As for the gorons i think most of them drowed during the flood but there is a few you see in WW who are traders.

Fish evolving into birds when the elements adapt to them the most. "but the fish that appeared are bigger than them!" Then wouldn't it make sense for them to adapt to overcome their predators instead of mastering a different element entirely?

I think they ARE the same. Think of this, Forest Haven is Kokiri Forest after the flood. Kokiri children don't die as long they are in the forest. Therefore, Koroks are the Kokiri hundreds of years after. Think about it.

They became OPPOSITES. Zoras. Live underwater, in water. Right? After the flood, they are Rito! Opposite of water is air. ^.^
Kokiri: Were children. Became Koroks. Koroks are wood people. Kokiri was a forest. Forests have tons of wood.
See? It all makes sense! It all winds up to be perfectly logical on why they are who they are.
