Depends if you want traditional Castlevania, Metroidvania, or the 3D iterations.
Traditional Castlevania are 2D sidescrollers that, while linear, usually have hidden pathways and such. The focus is on making it to the end of the stage, while killing monsters in your way. There are boss fights and such at certain points which are generally challenging. I personally like Super Castlevania IV in this style.
Metroidvania is a marriage of the labyrinth style of exploration found in the 2D Metroids, plus some RPG elements. Most of these games are fairly non-linear, and the focus is mainly on exploration. Castlevania: Symphony of the Night was the first Castlevania in this style, and it's one of the best.
The 3D ones have been a mixed bag, with the focus of the games shifting every couple of games. The better 3D ones are Castlevania: Lament of Innocence and Castlevania: Lords of Shadow, though I personally don't care much for the 3D games.
