No, if they remade FFVII they would ruin it (Come on, they've already given it a bad enough name with the "Compilation"; imagine how they would change the game to make it "fit in" better with the other titles) and the game would be forever disliked by all, without anyone knowing that the original game wasn't bad and that there was a time when FFVII was held in high esteem.
As for FFVI, I doubt many would want another super-deformed DS remake, especially for one of the most prestigious RPGs ever made. You see, a remake of FFVI is a perfect chance to fix the problem with FFVI's plot, in that it pretty much started going downhill about half of the way through; with a remake, they can make it feel like an entirely new and improved- but still familiar to long-time fans- experience. I would be disappointed if an FFVI remake was anything besides a full-blown PS3 re-imagining, although I would be able to live with a PSP or Wii remake.
