Tough call.
If you have an open mind, I'd suggest playing REmake first and then moving to RE2. You'll have to downgrade in the departments of graphics and overall presentation, but regardless of that you'll still be playing the two most highly-recommended "classic" RE games in the order that they take place in the story. Either that, or you could start with RE2 first, and then go back to the REmake. You'll lose things like the multiple scenarios, but you'll gain things like the improved horror atmosphere.
Another way to approach it would be to play the REmake first, and then RE0. Though, admittedly, I think this would be easy for me because I love all the RE games, but for someone who's new, it may be different since RE0 is usually considered to be a bottom-tier Resident Evil experience. But, that's all in the eye of the beholder. I, personally, enjoy RE0 more than Code Veronica and maybe even RE5, but for me it didn't touch REmake, RE2, or RE3.
Either way you cut it, I think if you want to "try out" the Resident Evil series, you should give at least two of the classic style games a chance (one of them being the REmake. This is mandatory!), and then if you like them, play the rest. If you don't, then skip the rest and move onto RE4.
