1.) I'm unsure, but it probably has something to do with zero gravity.
My guess: Without gravity, the birds can't move without giving themselves a push. They're not nearly as intelligent as us humans, and couldn't find a way to do it. They're used to flying through the air without such problems. Therefore, the birds died of starvation and/or thirst.
2.) The scientist could clearly see his Adam's Apple.
