Really, I just wanted an excuse to share this. I thought it was attractive and fortunately it tasted as good as it looked (that's what she said?)



So, there was a little "cheating" involved since I used some frozen vegetables. However, the spinach was fresh and straight from the farmer's market in Madison, Wi. I grilled the pork on the George Foreman before adding it to the mix. I sauteed everything in coconut oil and added a fair amount of garlic.

Coconut oil is fantastic. It gives this kind of dish a curry like flavor. The best part about the dish, though, was that it took a mere ten minutes once the pork was thawed.

Another ridiculously easy dish that I have almost every morning is frozen blueberries lightly fried in coconut oil. The taste is incredible, and there is some thought that light heating, rather than destroying the antioxidants in blueberries, may actually render them more bio-available. Come to think of it, this too is a very "pretty" dish, so I might post a picture of this one too.

Use this thread to share your dishes. Post pictures if possible. I enjoy food porn. Talk about your dietary philosophy. Hopefully we can all gain some ideas.

That almost looks like Moo Goo Gai Pan with pork. It looks yummy. I don't usually have pork since I'm limited in my cooking skills. I've made chicken teriyaki before, but I think next time I'll buy mirin instead. I don't like eating food that is too dark in color, and the mirin will likely give it a lighter flavor.

I can make sandwiches, but only for myself. Take that, internet.

Haha, I can't cook, bake, or anything xD The most I can do is heat up food in the microwave and make stuff like sandwiches. And I'm proud of myself for doing that. :p

Since it was Sunday and I was feeling ambitious, I tried another new dish:



As you might be able to tell, I'm a fan of stir fry. This may look quite similar to the first one, but it's entirely different. Ingredients:

-Mahi Mahi (fish)
-Mushrooms
-Carrots
-Kale
-Peppers
-Broccoli
-Pineapple
-Coconut oil

To be honest, it was blander than I hoped. Not bad, but the first one was better. If I could do it again, I'd probably leave out the broccoli because it I think it overpowered the pineapple. I wanted it to be sweeter. The carrots didn't lend as much sweetness as I hoped. Sweet potato chunks may have worked better.

[EDIT]

Figured I'd add dinner too:



-Liver
-Spinach
-Mushroom
-Garlic
-Butter
-Feta Cheese

Not bad. I'll be the first to admit that liver isn't the most palatable thing in the world, but it is something I try to incorporate from time to time because it is incredibly nutrient dense. This recipe could probably use some onions to further mask the liver . . .

Here's my attempt at food porn. The pictures I took remind me of a ♥♥♥♥ty Mexican or Chinese restaurant menu.

"""Boreal""" Canadian Blueberry Smoothie

The blueberries I got from Trader Joe's are "organic" and from the "boreal region" of Quebec. Sounds like bull♥♥♥♥, but the result at least tastes okay.

Ingredients:
  • frozen blueberries (of any kind)
  • 1/2 - 1 whole banana
  • kefir or yogurt of some kind
  • unsweetened coconut milk
  • one cup of chocolate flavored whey protein powder (go with the good stuff)



Blend the ingredients together until you achieve some kind of reasonable consistency. You can also add cinnamon for an added twist. The result is delicious.

Giant Garden Salad

Only the freshest garden vegetables and meats go into this dish.

Ingredients:
  • Meats
  • grilled chicken
  • bacon
  • optional: steak, beef, pork, fish, etc.
  • Vegetables
  • spring greens/lettuce
  • sliced tomatoes
  • red onions
  • bella mushrooms
  • cucumbers
  • pineapple
  • mixed berries
  • avocados
  • Dressing
  • extra virgin olive oil
  • balsamic/red wine vinegar
  • garlic
  • salt/pepper
  • Cheeses
  • blue cheese
  • Gorgonzola cheese
  • feta cheese

You can substitute a lot of the ingredients or omit others, it's really kind of a build your own thing, not even this picture matches the ingredients all that well:

Breakfast this morning.



Lightly fried blueberries, kale and eggs.

I'm a little surprised nobody else has shared anything . . .

I endorse AA's "Giant Garden Salad." I was there when he made it. It was pretty epic. His mom and brother were in a huge and stressful quarrel while we ate, but in his words, "nothing could ruin my enjoyment of this salad."

I can't cook worth crap. My boyfriend does most of the cooking. But having recently been put on a strict diet, I have to pick and choose certain things to eat.

I've recently found that ground turkey, chicken and pork is very omnomable

Variation on a theme:



I have to say this was delicious. I piled on the pineapple, which gave it a sweet, tangy flavor. Plus, the George Foreman is brilliant and grilling chicken breast. I omitted broccoli and mushrooms so they wouldn't mask the sweetness.

-Chicken Breast
-Pineapple
-Carrots
-Spinach
-Kale
-Peppers
-Coconut oil

I think I'll finish it off with one of my favorite treats.

I ate a dining hall for four school years (I didn't attend a private school, btw). It was very good food and convenient. That said, I've actually reduced my food expense cooking on my own. It can be annoying to come home and have to cook when you really just want to eat, but for the most part, I've learn to gain satisfaction out of it.

It appeals to me, first and foremost, because I can control what goes into my food. I've also had my mind opened to new ideas that I never would have considered before. Like purple potatoes from Japan.


Okinawan Sweet Potatoes

Delicious and extremely nutritious. They get their beautiful hue from the same antioxidant that is found in blueberries.

Also, blue potatoes aren't from japan. Sweet potatoes also aren't technically potatoes. WRONG ON BOTH ACCOUNTS!

However, that particular breed of them obviously must either be from Japan, or just have a name used in Japan. However blue potatoes were the first potatoes eaten by the Inca (I think it was them, one of the SA ancient civilizations). White potatoes have been bred over the centuries.

Those potatoes are definitely from Japan, the island of Okinawa specifically. They can be found in Asian markets. There is more than one kind of purple potato, though. The Okinawan Sweet potato is unique for its high antioxidant content. I've tried them. They're a little bit drier so you certainly don't want to overcook them, BUT they actually are sweeter than the common sweet potato.

I'm not informed on the taxonomic status of Okinawan sweet potatoes. It seemed very potato like to me, though I know such similarities may only be only superficial. They definitely seemed like some kind of closely related tuber.

I've never understood the difference either, I just know that sweet potatoes aren't technically potatoes. Kind of how Zebras are actually part of the bovine family despite the fact they look exactly like horses.

I was pretty sure that is not accurate when I read it, and I was right.

Zebra - Wikipedia, the free encyclopedia

Zebras are indeed equids and closely related to horses.

That said, I get your gist. Superficial resemblances are often misleading (a dolphin and a fish would be a good example), and I do think you're probably right about the potatoes.
