Cooking with Chocolate.

I'm currently doing a Foo Tech assignment, where we have to design our own Restaurant. I was plannin to do a chocolate themed one (to be dfferent).

Does anyone know any main meals that use chocolate in them? I've been searching the web, and all Ican find is Chicken Mole. Do any of you knowanything else?

Normally I would have changed the theme, but I find it interesting and would like to know if any main meal chocolate recipes exist out there.

I can't give you any recipies because I don't know them off the top of my head, but there actually is a lot you can do with choloate in a savoury dish.

The first one that comes to mind is chocolate glazed glrilled venison. It's a rack of vension with a dark chocolate and molasesglazed seared on the BBQ. I haven't actually gotten to try it, but I really want to. The sugars in the chocolate caramelize and go very nicely with the rich flavour of the meat.

You could alos do something along the lines of coconut milk-chocolate shrimp. You'd have to use a realy light chocolate so as not to over power the shrimp though, and just a little of it at that.

And to change things up a bit throw in something with white chocolate. It would compliment a white fish like halibut nicely.

make something with mole' sauce. it's mexican. it's smokey and a little spicey, not sweet. good for entrees

Molé is a good option.. but then again pretty much everything you can think of goes in Molé, including mexican chocolate.. which isn’t very sweet.

But who says you have to come up with a menu with popular dishes? Try coming up with your own recipes. That sounds fun, eh?

I suggest start watching the Food Network. My family has been obsessed with that channel. With the second hand exposure I have had to it I could be a cook. Haaaaah...

Steak and dark chocolate is absolutely fantastic. I had it in Venice once, and I've never looked back.
