They changed it. The moon and star thing is the symbol for the Gerudos. If you look close to the N64's one, you'll see it looks a lot like the symol of a certain flag. I don't remember which one, but I think it was Turkey's or some other country around that area. And since the Gerudo's are thieves, that country would see it as an offense. They also changed the colour of Ganondorf's blood.

And contrary to popular belief, the graphics were enhanced if even slightly. It's much the same way they enhanced the Sonic Adventure graphics from its Dreamcast release. The main difference is that they aren't as choppy as the N64 graphics are and the animation isn't as blocky or rigid. The main difference is the crest on the mirror shield, movable blocks and switches though.

EDIT: Just remembered that I forgot to mention something. Another enhancement was made to the shininess of the keys and a few other items that you pick up on the Biggoron Sword sidequest. Mainly the odd mushroom and the odd potion I think, but yah. Chrome textures were added to the pickup items and the Silver Scale you get from the Zora was enhanced with the glittery things more visible. And let's not forget the pulsating glimmer from the medallions and stones in the quest status subscreen. That wasn't there on the N64 version as I learned this past weekend.
