Well I don't think that there is much use for Link to speak. Afterall, Shigeru Miyamoto did say that he wants to limit Link from talking because they represent the player. Link is a link of the person playing him.
He wants us to imagine the way we want to imagine Link to be without giving him his own personality. That's why he hardly speaks, but shows facial expressions of how we would react in those situations.

I like the idea for voice acting. Perhaps, though, it should be limited to cutscenes or other important dialouge, otherwise it really wouldn't feel quite the same, always listening to people talk instead of reading text.
As for Link, I wouldn't mind him saying little things like "Yeah" or "No" or "Uhhhh..." or "Hey!" or anything little and/or insignificant like that. I mean, he did verbally say "C'mon!" in WW, and that didn't ruin that "link" with Link for me.

^ I suppose leaving them out for voice acting too. The only thing that I want to stay with Ganondorf is his famous evil laughter and Zelda's gasps.
The thing is, sometimes when there is voice acting, not everyone is satisfied and sometimes they can do an awful job that can ruin everything.

Having witnessed the voice acting as implemented in games like Assassin's Creed and others, I can say with absolute certainty that no Zelda game has come as close to immersing me into is world as well as games that liberally employ voice-acting. Hearing characters' conversations in the background and being able to pick up on information without an obligatory cutscene/text box dictating it creates a more "real" environment, and I'd like to see how well this would be employed in the Zelda universe.
