I don't see why they shouldn't strive for Skyrim graphics; it would be rather ideal for Zelda, and by no means depart from its original vision. Not a cheesy knock-off either, a very serious and epic ideal. All it really really needs is to keep the Ocarina of Time essentials. Explorability, innovative quests, and most importantly: that iconic atmosphere and charm. Don't just pull a
TP on the quests and atmosphere just because you're giving us decent graphics. Get Zelda right (with real care, not show, towards this unique world), make modern additions to gameplay, + pull off amazing graphics? You will have a perfect game.
It's not enough for designers to want it to be amazing (more than ever before!) You need people who know what they're doing, who really understand what made Zelda remarkable and different from other games. Every little thing.
Also people's comments about remakes... no anime, more traditional oriental and old age... REMAKE LINK TO THE PAST... or something that resembles that style of mature darkness and fantasy (not try-hard darkness like twilight and black spirits), a real full-fledged romanticism... 3D and completely redone new. Really think about how you're going to approach this game, designers. You're dealing with something that's already a masterpiece. You have to absolutely capture its atmosphere in near real life graphics while pulling us deep into it like we can't escape.
It's not really enough to have real life graphics; the whole flow of the game needs to be real-time yet constantly feel like you're adventuring solo. That means no limits in exploration this time. Cut way down on cut scenes, story, all the cued show. Make it hearty. A full project that is almost anti-show and better than it looks, if you know what I mean.
