Exactly, we've never actually have seen Ganon doing the evil, we've only the aftermath. We need more Ganon in action. Have him kill the king in front of Link's eyes or something, make Link lose the battle and suffer the consequences.
And yeah the whole Zelda story is as cliche as it can get really.

Stop being narrow minded, it is FAR from gone. You're saying that because you're not fond of him, Nintendo hasn't even begun exploring Ganondorf. How can you say it's thoroughly plumbed if the only thing he has ever done has been the same every time?

That wouldn't change a lot seeing that Zelda and Link still we're basicly Zelda and Link as they have always been.
Unless they make him totally unaware of his past life like link was, that could be cool. Focusing the game on preventing the new Ganondorf to become like his previous incarnation has many interesting story possibilities.

Perhaps, he could misguide Link into doing the wrong thing without Link (the player) knowing it.
