You can see the smilies in each post you make, aslong as you aren't using the quick reply.

That's because you probably have it set to the basic text box.

Go to User CP.

Edit Options.

Scroll down to a box that says: Message Editor Interface
Set it to: Standard Editor - Extra formatting controls.

Now try making a post (not quick reply) and you'll have a bunch of new options, including a list of the smilies.
