If you're more interested in some shorter self-contained stuff, I would recommend reading the first two volumes of the
Ultimates title before going into
Ultimate X-Men. Not that the X-book doesn't start out incredibly well, but it really takes a turn for the worse about 3/4 of the way through. Both
Ultimates volumes are really good and are only made up of 13 issues each. They also happen to be written by Mark Millar, who actually wrote
Old Man Logan as well.
Also in Marvel U worth checking out in terms of limited series' is the five-issue
MadroX, which Peter David wrote for the Marvel Knights line. It's a very cool film noir-ish story that leads nicely in the current on-going
X-Factor series, but works well on its own.
And obviously Joss Whedon's run on
Astonishing X-Men is great. It's 24 issues plus one giant-size finale. Also worth looking into (though more lengthy) are the first two Brian K. Vaughan's
Runaways, though you can probably stop after Joss Whedon's six-issue run that wrapped the second volume. The book was ok after that, but honestly even Joss wasn't as good with the series as the creator was.
For you, specifically I would also really recommend the limited series
Daytripper from Vertigo, I can't imagine you wouldn't enjoy that. It's not super-hero based, but its an incredible little series.

EDIT: Oh, the issue of
Ultimate X-Men I was referring to in the video is #41. It's entirely stand-alone and remains one of my favourite single issues of any comic to this day.
