A Different Kind of Art, FOOD!

There's alot of writing, drawing, painting, and music around here. I thought I'd bring around a new medium. I'm going to post my cooking portfolio (or at least some of it). Most of the pictures were plated by my teacher and the pics were taken by the photography class (you'll be able to tell the ones which weren't), however I did take, a usualy large, part in making everything. Just so everyone knows, in class we did a teacher's buffet every Friday and it always had a theme. Some of these pictures are also pretty old so I don't remember every detail like the type of fish, or what the garnish is, but I'll fill in everything I know.


This is the down east meal. Pretty simple, fish & chips, coleslaw and Manhatan clam chowder. We also did a New England clam chowder which isn't featured in this picture.


The down east deszert. A chocolate truffle ontop of firm whipped cream and a chocolate cookie, topped with a peach slice.


Possibly one of the worst meals I've ever eaten nutrition wise, but it was awesome! My friends and I made this to go with a night os SSBB. BBQ chicekn wings, marinated grilled steak, and baccon pie. To make this even worse we had ice cream and donut balls for desert.


The main course of Caribean week. Jerk chicken and fried plantains ontop of collared greens with rice and peas.


The rest of the caribean meal. Roti, with oxtail stew and (I think) spaghetti squash. Garnished with a piece of grilled pinapple.


Cribean desert. Pinapple upsidedown cake with a raspberry cooli


This was one of my favourite weeks. "Untraditional Christmas". We did all classic christmas ingredients but cooked them completly differently. Here we have chipotle BBQ turkey breast, with scallopped potatoes, and sauteed green beans and peppers.


Also from christmas, a butternut squash soup with jalapeno cornbread.


Christmas desert. A triffle made with stawberries, lady fingers, whipped cream and other misc. fruit.


The whole untraditional christmas meal.


An Asian inspired stir fry I made for dinner one night. Pretty basic, rice noodles, srtip beef, bamboo, water chestnuts nd some veg.


Japanese week. We have here both grilled salmon and chicken, stuffed Japanese egg plant, maki rolls, and a stir fry on rice.


Japanese desert. A slice of plum tart on a sweet potato cake.

We started Italian week with a little anti-pasto. Bruschetta and procuitto wrapped cantaloupe.


The main course for Italian. Lasagna, ricotta and spinach raviolis, and chicken saltembolka.


The classic Italian desert, tiramisu.


Breakfast! Sausage, stuffed chicken, eggs benedict, and a variation of it, eggs Neptune.


Salmon chaud frois. a decorative breakfast piece which is cooked, then served cold.


What would breakfast be without finishing it off with a crepe?


Some chicken wings I was experimenting with at home. Honey-ginger chicken wings. They're really good, and baked, not fried.


Russian meal. Cabbage rolls, perogies with fried onions, beef stroganoff, and sauteed beans and pepper. Int he top corner there is also borscht.

That's it for now, I'll try to get a few more up soon. Let me know what you think.

You're making me hungry again. And I'm already overweight by my peers' standards.
The food does look delicious though. I especially like the breakfast with a crepe.

The thing about this is since no one here is going to eat you (except you), you don't even have to cook it well. As long as it looks good, positive posts will come.

It's bad enough I'm looking at it... but I can even see its texture.... *mouth waters.*

thrairth, I actualy would like to try being a personal chef some time. I think I'd enjoy it because I'd get to cook and everything, but there wouldn't be all the hasstle of business. Then again, it could be just as stressful, but like I said, I'd love to give it a try if I ever get the chance.

Okay, here's the abridged story.
My dad used to be a sous chef at a small hotel so he knows a little about cooking. I'm a picky eater so when I was you he used to get me to make stuff I liked. From then on I liked cooking, and started playing around at home. I taught myself from that and the food network. Lat year in grade 12 I took grade 11 chef training (a year late due to time table conflicts) my first formal course. I decided I wanted to make this a career and went back to high school this year to take a specialty course which got me my aprenticeship.
I took 2 cooking courses first semester and then the Ontario Youth Aprenticeship Program (OYAP) this semester. It's working out realy well and I'm going to be a chef one day, but right now I'm just an aprentice cook.

ah awesome. I'd kill to have that kind of resolve in pursuing something I loved XD

I asked though, cuz my brother's a professional chef. my whole family's pretty much a bunch of foodies...which made me very spoiled in what I eat, and yet, I don't like to cook XD I'm the black sheep. maybe one day I'll learn how to cook at least decently...

he likes it, but he's kinda fed up with the lack of pay. last I heard he was making less money than I do - and I do data entry, with no real college education at the time. but I know he enjoys cooking - the fast-paced atmosphere, the creativity involved, etc. he loves all that. and he definitely loves showing off all the things he's learned. XD

yeah, he's made big meals like birthday dinners, christmas and thanksgiving all kinds of interesting and made of win. I couldn't tell you what all he's cooked, but I can tell you it was exceptionally fantastic. that last meal he cooked was the best pork I've ever had in my life. he called it "not the 'other white meat'" XD I think he had gnocchi and dandelion greens on the side or sumptin.

mmmmm...gnocchi... ~mouth waters~

ugh I made myself hungry again.
