Well, I'm not quite sure if I completely understand what you mean. Those games that you mentioned, TloZ:OOT/MM and Star Fox 64, did not have pre-recorded symphony/orchestral music. They where made with synthesizers and other such music producing equipment.
If you mean the general music style in these games, then I would have to ask you to look around more. There are tons of games out there that use such type of a musical style, look at the later Castlevania series of games. Like Castlevania: Symphony of the Night, (hence, symphony) it has many outstanding/elegant songs that stretch through it's entire soundtrack.
Look around and you will notice that there are multitudes of games have such style of elegant music...
