Amon_Knives said it. Nintendo chose to have Ganondorf transform into different Ganon forms at the beginning of the battle. Then in the last part, they used the human Ganondorf for variety. He wouldn't seem as human when he was talking about Gerudo Valley and all if he were a giant pig, and if he turned into Ganon again right before you fought, where would the variety be? TWW wasn't exactly similar to OOT, so there was no need to make it the same. I like variety.
