I liked riding my pony around Hyrule Field in Twilight Princess. She is just the cutest thing ever ...I did also enjoy watching the shifts between night and day. Kind of had that serene feel. The music was great too. Other than those factors and all pony riding aside, there wasn't really much else to the TP over world, minus a few holes in the ground leading to treasure, etc. Sometimes it even felt kind of lonely, after awhile... though I wouldn't say that this lonliness factor is limited to just TP.
