The problem with ZeLink in OoT though is that she is missing for more than half of the game. I mean, not really, since she's Sheik, but Link doesn't know this. The only interactions he truly has with her throughout the course of the game are in the courtyard, the message she left in the Ocarina of Time, just after she reveals herself, before the Ganon battle, and before she sends him back in time. Other than that, Link never even knows he's talking with Zelda. Now, I'll admit that in those select scenes it seems as though something between them could be, but will never work for the reasons you stated.

I find Malon a much more likely choice for Link in OoT. She's a much more down to earth girl. I mean, she works on a farm after all. Link rescues her from Ingo and borrows her horse. She cutely calls him fairy boy. Plus TP has Link, who is descended (or at least it's heavily implied) from OoT Link lives in a small farming community. Malon is much more likely, me thinks.
