I think OoT's Castle Town (Market) is great, and to be expanded on to meet today's standards is what I'd like. TP tried and it didn't quite do it for me...

In OoT you can have the dog to keep following you to the next loading area of the town and the cat in TP will not. OoT has it involved a fun sidequest on finding the right lady's dog.

OoT's has three mini-games, TP's only has one. I want there to be more. TP has that bug hunting that I have zero motivation to finish, and the poe hunt is pretty much OoT's gold skulltulas hunt version 2 and it's worst.

OoT's has interactive NPCs that are both entertaining and informative (showing off each mask to them is a bonus), in TP you feel left out where your attention only reaches to mostly the important NPCs. I want to feel connected to the "lesser" people, TP lacks this in their Castle Town. You can say TP has this in Ordon and Kakariko Village, but OoT also has it all outside of Castle Town with its Kokiri Forest and Kakariko Village. I would even say OoT's Kakariko Village is more lively than TP's.

tl;dr version: OoT did it right.
