I beat and loved Castlevania 2: Simons Quest on NES but other then that I haven't really played one with the intention of beating it. I think the only other ones I played where Super/4 and 64.

I would be very interested in a wii installment.

Edit:

Actually now that I think about it I think I beat 64 and I also played the one on DS for a short car ride to the mall once.
