All I have to say is that I reckon that at some point during the seven years Link slept, at least one actual battle occurred between the forces of Ganondorf and the Hylian Military, thus allowing it to be referred to as a "war". You seem to have covered this by saying some of the Knights of Hyrule died as a result, and that no one seems to be left when Link wakes up, so yeah.
