That being said, it was the intention of this to make it so you don't NOT use said and NOT replace it with new fangled words ALL the time.

Moderation is the main point. And yes, using said all the time makes you cringe because it doesn't add attitude to the way people are talking. If everyone merely 'said' everything, it doesn't give them character and makes it sound like a monologue done by a poor drama student.
