It could however be that the king has died during the invasion of Zant, since Zelda and the few guards seem to be located at the castles last resort. He might have fallen in battle and thus the ruling power goes to Zelda. This would also serve as a good explanation as to why she is still revered to as princess, there was no time for a offical crowning.
This tracks with what we learn later in the game, with the Zora prince's mother (their queen) also having been executed in front of her royal court during Ganon's invasion.

The King of Hyrule and/or the Queen very likely could also have been killed by Zant at some point prior to the start of the game, with Princess Zelda forced to assume leadership over the kingdom, surrendering to Zant, et al.
