The helmaroc king (the big bird) was probably created by magic, or it's a kargaroc (little birds from WW) that had a spell put on it by ganon to make it big, and it's colours change, and ganon gave it a helmet (so if it got lost, and someone found the bird, the helmet would have something on it like "the helmaroc king belongs to the king of evil ganon, please return to the forsaken fortress as soon as possible, little ganny gets lonely without his birdy...
