Other ones that I like:
Soramimi Cake - Intro to
Azumanga Diaoh. Very light and bouncy, fits the show perfectly.
Yakusoku wa Iranai - Intro to
The Vision of Escaflowne, an excellent melody, with some interesting instrument choices (the full version has a bagpipe solo!), the vocals are astounding.
Zankoku na Tenshi no Tēze - This one hardly needs introduction, it's the intro song to Neon Genesis Evangelion. Excellent vocals and just generally exceptional.
Pretty much the entire soundtrack to Cowboy Beebop (As I said, Kanno should be a goddess or something) is also on my list.
