I tink Ganondorf knew--or at least sensed--that Link was the one he needed to open the Sacred realm so he could seize the Triforce, hence why he didnt kill Link when he was a child. He probably halfway regrets that decision once Link dons the title of Hero of Time seven years later.
It's kind of funny, really. Link, Zelda and Ganondorf are all connected, really. Ganondorf can never really kill either one of them because he will eventually need thier two Triforces. it's a constant struggle between the three of them.
As for Ganondorf knowing sorcery before officially acquiring Power, it might be in the Gerudian heritage. And look at Koume and Kotake. Those two were Ganondorf's surrogate mothers, and they clearly knew magic--the kidnapped Nabooru via a vortex of black magic, and then Twinrova in OoT. they probably taught it to him.
