If you found it so easy and did it in one shot, I really don't know how you could enjoy OoT, TWW, TP, PH or TMC. They'd "do it with your eyes closed" easy.
Do you have the Wii or the GC version?
How long have you been gaming?
Was TP your first game?
Was the console you played TP on your first console?
These are a few huge factors when it comes to difficulty.

For exapmle, my first Zelda was OoT. I got it in 4th grade. I had a lot of trouble with it. I still find the water temple to be rather hard. Although, now I don't die as much if at all as I used to. First time I fought volvagia, I must have died 50+ times. Now, I am much more experienced. Although I don't get the same challenge I got 6 years ago, I enjoy the games for a few reasons: nostalgia, good story, the occasional challenge, and new experiences in general.

Also, no one can play with their eyes closed and win on purpose, unless they have memorized the games, which I find a waste of time.

I enjoy the games because they are fun to play. I would like more of a challenge, but I take what I can get.

PS: OoT is a lot harder than the other games in that list of yours.

The first 6 games in the series were the hardest. The last 8 have been getting (for the most part) progressively easier.
