A number of reasons.
It adds to the replay value of the game, it translates Valoo, Jabun, and the Deku Tree's Hylian into English (which allows players to obviously understand what they said; it wouldn't make sense if you could understand them in the first quest), and its mainly used for the Nintendo Gallery and the figurines.
